The formulas
- Plate food cost % = plate cost ÷ menu price
- Menu price at your target = plate cost ÷ target food cost %
- Usable cost = price paid ÷ usable yield %
- Kitchen food cost % = (beginning inventory + purchases − ending inventory) ÷ food sales
